What do I do with Fennel Fronds (fennel leaves)?

Fennel has a unique flavour, whether you're eating the fennel bulb or fennel leaves (also called fronds) they taste distinctly like licorice, except people that don't like licorice often like fennel, so don't be afraid to try it!

Here's a quick and easy Fennel Frond recipe, if you try it let me know what you think!

Fennel Frond Pesto

▢ 2 packed cups chopped fennel fronds
▢ 1 clove garlic (crushed)
▢ 1/8 cup pumpkin seeds (You could also use walnuts, pecans, cashews or pine nuts)
▢ 3-4 tablespoons extra light olive oil
▢ Juice of ½ lemon
▢ ½ teaspoon ground black pepper
▢ Salt to taste
▢ 1 tablespoon nutritional yeast (optional)

Put all the ingredients in a food processor and blitz until a coarse paste forms, you may need to add oil 1 tablespoon at a time to get a consistency you like.

This can be used wherever you normally use pesto; as a dip, on toast, over eggs or mixed through pasta for a quick meal, you're only limited by your imagination!
